High Fibre, Vegan, Refined Sugar Free.
2 ripe bananas, mashed
1 tablespoon chia seeds
3 tablespoons water
1/4 teaspoon freshly ground cinnamon
1/4 teaspoon ground turmeric
4 tablespoons almond meal
1/2 teaspoon baking powder
Coconut or olive oil (for frying)
The Wild Orange + Cacao Crumble
1/4 cup frozen blueberries
1/4 cup frozen raspberries
Juice of half an orange
1 teaspoon maple syrup or rice malt syrup (optional)
Make berry sauce by adding all ingredients to a small pot, over a low to medium heat. Allow to cook, stirring occasionally, until the orange juice has reduced and the sauce has thickened. Set aside.
For the fritters, soak chia seeds for 15 minutes in water. Add ripe bananas and mash. Measure out ground cinnamon, turmeric, almond meal, baking powder and add to banana mixture. Mix until combined. Put a non-stick fry pan on a medium to high heat, add oil and when hot, place tablespoons of the mixture into the pan (the non-stick pan will mean that less oil is required). Allow the fritters to fry until golden, and carefully flip them over. Once both sides are crispy and delicious, remove from pan and serve with berry sauce, The Wild Orange + Cacao Crumble and coconut yogurt. Eat warm.
